I visited Florence years ago and went into this little deli/market where I ordered this caprese style sandwich with pesto and turkey. I took it to go and had it picnic style on the streets of the city and maybe it was my surroundings, but I'm pretty sure it was the best sandwich I've ever eaten and it's one I still dream about today! It is the perfect picnic sandwich and I could go on and on about what makes this so delicious, but I think you should try it for yourself!

Ingredients

Ciabatta bread

Extra Virgin Olive Oil

Salt

Basil Pesto Sauce

Tomato Slices
-
Fresh Mozzarella, Sliced

Baby Spinach Leaves

Sliced Deli Turkey Meat, about 2-3 ounces, to your liking
Directions
Cut ciabatta bread in half lengthwise. Drizzle both halves with extra virgin olive oil and toast in the oven, cut sides up, for about 5-10 minutes until the bread is lightly toasted but still retains a softness to it.
Spread pesto sauce onto each half of the bread. You can do as little or as much as you like - I like about 2-3 tablespoons on each half, depending on the size of your bread.
Place a layer of spinach leaves on the bottom half of the bread, followed by a layer of tomato slices, turkey, and mozzarella cheese (enough to cover the length of the sandwich).
Drizzle a little bit of extra virgin olive oil over the cheese and sprinkle with a little bit of salt.
Place the top half of bread on the sandwich.
Optional Step Here is where I like to wrap the sandwich in aluminum foil and place back in the oven for a few minutes to warm through, but I want to avoid melting the cheese completely. I think what makes this sandwich so good is the difference in textures and in the temperature of the ingredients! Trust me on this one. :)
